A SMB Bake Date!

It has been a crazy couple of weeks and I have been craving for cake.

Not the rich decadent sort, but something that could fulfill my cake craving and not have to feel guilty about eating it. I finally got to eat cake (that I made myself!) after spending Saturday morning with Pauline and Louisa of Munch Ministry, and 13 ladies from SMB, where we learnt how to make Hokkaido Chiffon Cakes.

Part of the process in making a chiffon cake is beat the egg whites into a meringue. Unlike the traditional Pandan Chiffon Cakes that my mom used to bake often when I was a child, there isn’t a need for the egg whites to be beaten into stiff peaks for Hokkaido Chiffon Cakes. It isn’t that difficult to make the chiffon cake, however you will need to take note some of the small details in the process to achieve the light and airy texture of the cake.

The separation of the egg white from the egg yolk has to be done quite gingerly, to ensure that no egg yolk will find its way into the bowl of whites which will affect the fullness of the meringue.

As you can see, the activity of separating egg yolks from the whites, can be easy for some like Estella. While for others, like Jennifer, some of the egg yolk did manage to find their way into her bowl of egg whites and she had to try to remove the runny yolks from the mixing bowl. As for my own experience separating yolks from the white? I wasted one egg after being too heavy handed, breaking the yolk when hitting the egg swiftly against the edge of a bowl.

Still need some help in learning how to separate the egg yolk from the egg white? Here’s 6 different ways how to separate egg yolk from the whites.

When it came to beating the egg whites, cream of tartar was added to stabilize the egg whites. Do make sure that the mixer and mixing bowls are clean and dry, Any specks of oil, water or yolk can affect the volume of the meringue. Here are more useful tips I learnt to ensure that the meringue stiffens;

1. Wait for the egg white mixture to turn bubbly and foamy during mixing before adding the sugar. The sugar needs to be added gradually in 3 parts, instead of all at once

2. Cold eggs separate more easily, so do leave the eggs out at room temperature before beating, for maximum volume in the meringue

3. Use copper, glass or stainless steel mixing bowl, and not plastic as it might keep some grease stains which will affect the meringue

4. A small amount of cream of tartar stabilizes the ‘foam’ and makes it less likely to collapse

Digress. I think mom bloggers are experts when it comes to knowing when to stop what they are doing / pass the job to someone else, flash their pearlies and strike that perfect pose for 5 seconds, when a roving camera comes along for a photo opportunity.

Now back to baking.

Mabel (my baking partner) and I shared the duties, she worked on the egg yolk mixture, while I focused on getting the meringue ready. We were concerned initially that the meringue mix was done too early and that it might curdle and collapse before folding in the egg yolk mixture. However, Pauline mentioned that the recipe will work fine even when the meringue is kept aside for a while before being added in (Phew!). Would have been a different story though, if it was Pandan Chiffon that we were attempting to make.

We gently folded in the egg yolk + vegetable oil batter into the egg white meringue and took note not to stir or beat the batter in, so as to ensure a light and fluffy chiffon cupcake. Then it was time to pour the mixture into cupcakes holders and pop in to the oven for about 15-25 minutes.

The cupcakes were removed from the oven when it was lightly browned, and Mabel and I waited for the cupcakes to cool before piping in the custard filling.

We were likely the most efficient team that morning, who got our cupcakes rather quickly into the oven then piped in custard fillings and we couldn’t resist picking up one each for ourselves to try. Probably on a good day with cake cravings, I could devour 5 of these at one sitting.

A Mad Science Party!

K had his first Mad Science Party experience for his birthday this year. The last birthday party we had for K, with friends, was when he was four. Surrounded by excited 3-5 year olds running amok in the estate, having to break up fights along the way, and needing to calm an over-stimulated K who threw a tantrum halfway during the party, was not exactly my idea of a great time.

Not for me anyhow.

But I am sure the kids enjoyed the party, I suppose. After all time slaving over the computer to plan for party games, creating materials to print and laminate, sourcing for decent things to fill the goodie bags. What about the cake? I am now convinced that pretty fondant cakes look really fancy and pretty, but the taste? Bland and dry.

I told myself this year that K’s birthday will be really simple, just a cake and some goodie bags. So when Mad Science got in touch with me recently, I was thrilled to be able to have a party for K, all without any hassle on my end.

All I needed to get for the party was the cake.

MS 1The red and blue thing on the chocolate banana cake is a $9.90 plastic spiderman topper. Not fondant, the kid doesn’t care for it. Who eats fondant anyway?

 

So, the key highlight of the party has to be the arrival of the Mad Scientist from Mad Science and her travelling laboratory of beakers filled with colorful liquids and intriguing gadgets.

Have you ever been in a room with 23 kids who are fascinated and engaged with the activities for a full 1 hour 15 minutes? Then read on to see what went on in K’s party that could have enthralled them from the start to finish.

K’s Air Blast Party from Mad Science included numerous interactive experiments, intriguing chemical reactions and hands-on activities  :-

  • The first experiment was with a boiled egg (Eggbert) and a glass beaker (his house); Eggbert the two inch Mad Science assistant can’t get into his house because he has overeaten! How did the Mad Scientist get Eggbert into his house? The science of air pressure is used to solve his predicament.

  • The second experiment was with styrofoam. Peggy’s apartment is a mess (of styrofoam), how can we help her to clean up? The kids learnt about chemical reactions when Mad Scientist dramatically shrink the mess to help Peggy clean up

  • Create puffs of vortices with vortex generators! The Birthday boy gets to blow a candle the Mad Science way, using a vortex generator

My review of the Mad Science Party?

Mad Science will be the highlight of any birthday party for kids between 4-12 years old. The story telling method used to teach science concepts was easy to understand, fun and engaging. K’s classmates at the party participated in at least 3 interactive activities, so they were not just spectators who watched the experiments.

And the result of the Mad Science Party?

There was clear excitement in the air after the party ended. I think the best time to have a Mad Science Party is in the late afternoon, when the kids have had their naps (which was what we did).

Do be prepared for a room full of thrilled and chatty kids who will be admiring their gooey slime and smiley teachers at the end of the session :)

Astonishing Facts from the Bible about Christmas

As we approach Christmas this year, here’s a couple of astonishing facts from the bible about Christmas :-

1. When was Jesus’ born?

December 25th is an incorrect date for Jesus’ birth. Not in winter for sure. No Roman administrator will allow a census to be taken when the roads are impassable, and when the people then don’t travel in winter.

From Luke 2:8, the angel first appeared to the shepherds in the fields to announce the birth of Jesus, Now there were in the same country shepherds living out in the fields, keeping watch over their flock by night. The winter period in Bethlehem is quite chilly, thus no sensible shepherds will want to hang out with their sheep in the cold and wet fields.

Bible scholars put the Gematria date closer to 20 September (yeah! That’s like 3 days after my birthday).

So how did the December 25th date came about?

The date of December 25th was known as the Roman Saturnalia (in honor of the Roman’s god Saturn) and it was the greatest of all pagan festivals. Although Saturnalia may be of Roman origin, the ancient Babylonians also celebrated the feast of the son of Isis (goddess of nature) on December 25. Their celebrations on this day were complete with boisterous celebration, gluttonous eating and drinking, and gift-giving as part of the traditions.

Sounds familiar doesn’t it?

 

2. Christmas Tree

The word Christmas itself is not mentioned in the Bible. The only tree that is decorated with silver and gold in the bible is here;

For the customs of the peoples are futile;
For one cuts a tree from the forest,
The work of the hands of the workman, with the ax.
4 They decorate it with silver and gold;
They fasten it with nails and hammers
So that it will not topple. – Jeremiah 10:3-4

Who said these words? The text before this sentence started with ‘Thus say the Lord…’ Probably some might argue that God this passage was addressed to the Israelites and not the Gentiles (all other races who are not Jewish).

I am not disdaining the use of a Christmas tree during Christmas, which I think many enjoy the nostalgia and the tradition of putting up decorations on the tree as an annual family activity.  Having a Christmas Tree in a home is a personal choice, and since I have discovered the roots of the Christmas tree almost 2 years ago, I have stopped putting up a tree at home.

 

3. The Three Wise Men

See these Three Wise Men in this familiar nativity scene,

The fact is that The Three Wise Men were never mentioned in the bible in the story of Jesus’ birth, as there was no wise men present at the manger scene the night Jesus was born. The shepherds were the one who saw baby Jesus in the manger. The Three Wise Men only showed up later in a house when Jesus was a young child.

This passage from Matthew shows when the Wise Men came to visit the child Jesus and Mary;

And when they had come into the house, they saw the young Child with Mary His mother, and fell down and worshiped Him. And when they had opened their treasures, they presented gifts to Him: gold, frankincense, and myrrh. – Matthew 2:11


4. Gift Giving

Most people associate gift-giving with the wise men, as they presented their gifts to baby Jesus. That practice of gift giving is another of pagan origins, it was part of a “good luck” exchange during Roman Saturnalia celebrations. The rich gave gifts to the poor in honor of the “age of liberty when god Saturn ruled the known world.”

For the last few Christmas-es, gift giving has been more of an extended family tradition activity for me, reserved for extended family members and children. It has also become more reciprocal for close friends who give me presents.

When I finally do become a grandma, I will set a new tradition that gift giving will not be necessary during Christmas, and will only be reserved for the children in my family. I will also introduce the practice of reading the Christmas story from Luke 2 and Matthew 2, singing and listening to Christmas carols as part of our family tradition.

What’s a TRUE Christmas?

I hate to be a wet blanket. But it is hard to deny that Christmas with its pagan influences have been commercialized through the ages.

Sounds like I am responding with “Bah Humbug Christmas!” very much like Scrooge from the Charles Dicken’s story of ‘The Christmas Carol.’

Christmas for me is really not about the lights, celebrations, food or presents.

The TRUE Christmas story is how God humbled Himself and walked into this world. Suddenly and surprisingly, born on a dirty floor of a filthy stable. Small, insignificant, unable to feed Himself. Love came down from heaven.

God came down through Jesus Christ to bring us peace with Him.

“Glory to God in the the highest, and on earth peace to men on whom His favor rests.” Luke 2:14

God first brings peace between man and God, through Jesus Christ. And in turn we show that peace towards fellow men, in the same love that Christ gives us.

Blessed Christmas friends. May this Christmas surround you with love, and most importantly, bring you peace with God, through repentance and salvation through Jesus Christ.

True peace is when we know that our eternal salvation is secured through Christ.

Peace I leave with you, My peace I give to you; not as the world gives do I give to you. Let not your heart be troubled, neither let it be afraid. – John 14:27

A Christmas list of handmades

It's been all about handmades this Christmas.

It started with crazily crafting for fund raising for the Children's Hunger Fund. Incidentally, I got an email from the people from the organisation, that a total of USD$835.00 was raised from Singapore! About 40% was raised from our sale of handmades, while the rest were from direct donations online. This is not a huge amount, but I consider it an achievement since Children's Hunger Fund had little or no awareness from this side of our world. This amount roughly translates to 16,700 additional meals for the hungry children! Every little effort to help was indeed significant!

My appreciation goes out to all the blogging moms friends (you know who u are smiley) who have helped to create the awareness needed for this fund amongst their friends and contacts. As well as fellow crafting friends, Pauline, Lena and Rachel, who spent so much of their time to painstaking make the handmades needed to raise the funds. Thanks once again for your time and effort, ladies!

Despite not being in a celebratory mood during Christmas, I still rejoiced…knowing that we were able to make a difference to someone else's life this year. And how about repeating this for Christmas next year, ladies? 

As for personal handmade gifts, since Christmas presents have all been opened, it now safe for me to post this without spoiling any fun for anyone.

I am really enjoying needle-felting, so I will be making a couple more small zipper pouches for my friends, each with a personalised picture on the pouch. 

I hope to be making more handmades in the coming year, possibly considering to peddle them on my personalised etsy shop…will have to depend on how much time I have on hand, just have see how things pan out.

Thanks to family and friends who were at Kyle's birthday party, we had a wonderful time…despite the craziness of having all 13 children in a room :) After this experience of planning the party and having an overload of printing and cutting dinosaurs' stuff, it will be a while before I think of having a party for Kyle in the subsequent years.

On Christmas Eve…

Christmas for the family usually starts on the eve of Christmas day. A time when…

1. There will be a 'mountain-load' of presents waiting to be unwrapped

The Ringbearer

He was terrible during the rehearsals.

Refused to walk down the aisle quoting that he was feeling 'moody' that day. Then when he decided to participate in the rehearsal for the bridal party down the aisle, he deliberately walked so slowly and then ran down the aisle, leaving poor Janae the flower girl behind.

Hb and I had to give him a good talking-to after that.

When he realised that he had a really important job; leading the bridal party and passing the rings to the Pastor, he decided to be compliant and follow through, despite having high fever the night before and then nursing a slight fever through the late morning.

The ringbearer had a great time at the wedding despite his fever spiking to 39.1 degrees moments before we left for home.

It has been a taxing day for hb and I, not that we had alot to do for the wedding. But rather, we had to ensure his temperature was kept under control and that he got his rest in between the day wedding and the evening dinner.

His fever spiked to 39.2 degrees celsius during the tail end of the dinner, hb and I even resorted to using a table napkin soaked in ice cold water to keep his temperature down. He was still really active throughout, so we left early and lethargy only set in when we were in the car on our way home.

The fever did not return last night, thank God for His healing hands on Kyle. He seems to have battled the flu bug and is on his way to recovery this morning.

My 3rd Mother’s Day

My first mother's day gift and card from K. He came out of class this afternoon toting these two items in his hands and said, "Mummy, I love you!"

He probably had quite a bit of help from his teachers in school to put this together, but it sure warms my heart to be able to receive this from him for the very first time.

Kyle turns three!

Kbirthday5After an extremely challenging morning with a misbehaving K, dh and I found the perfect excuse to leave the house legitimately (with K’s permission) to get his birthday cake. K was aware that his misbehaviour had consequences and was feeling quite miserable, but he knew that he had to stay at home with our helper.

We quietly put up the decorations in the hall when we got back, while K took his afternoon nap.

When K got up, he grinned from ear to ear to see the house decorated for his birthday party and could not wait to celebrate his birthday in the evening.

Kbirthday1The highlight of the evening was the cake that we ‘pimped up’, Ben-10 style. I skipped the idea of getting a nicely decorated Ben-10 fondant cake and went with a strawberry shortcake from Canele instead. To make the cake look a little more authentic Ben-10 style, I relegated the strawberries and replaced them with green chocolate chips and Ben-10 figurines. It was a hit with the birthday boy, and the adults who attended his party sure were glad that they were not fed a heavy butter-cream cake enveloped with fancy fondant-covered decorations. Kbirthday3

Annual Christmas do

The Christmas season will not be complete without a get-together with friends. This is the second year that I have my friends over my place, and this year, I decided to make my own Christmas presents. box3In an attempt to make more cupcakes from the first recipe, I added less batter in some of the cupcake liners and ended up with 3/4 size of a cupcake. The result was less than satisfactory, however it was still rather satisfying to roll the coloured fondant and decorating the cupcakes with it.

As for the menu for the evening : Bulgogi beef, kimchi and Shabu shabu beef with lots of mushrooms. Little preparation that I had to do before hand; thanks to dad who shared his recipe with me (he is always excellent at sniffing out ways to create easy and tasty creations). We were so stuffed trying to finish the food that I ended up not bringing out the brownie and fruits that Linda brought for dessert.

K really appreciated having Alex’s company. He stroked and pinched her cheek (quite gently I think, since Alex did not complain) a couple of times, and I was pleasantly surprised that he had little qualms in sharing his toys.box1
